Scope of Job:

As an assistant to the Chef, you'll help oversee the culinary operations and food production in our kitchen, ensuring excellence at every turn.

 

Key Objectives:

  • Menu Development: Assist in creating, costing, and implementing innovative menu options for our restaurant, bar, and special events.
  • Cost Monitoring: Help keep food costs in check to align with financial goals.
  • Quality Standards: Set and uphold high standards for food delivery, presentation, and service. Source top-quality products to meet our high expectations.
  • Food Safety: Serve as the key contact for food safety, ensuring adherence to best practices and corporate guidelines for the safety of guests and staff.

Main Responsibilities:

 

Operations:

  • Efficiency: Maximize kitchen efficiency.
  • Cleanliness: Ensure the hotel's restaurants maintain top cleanliness, adhering to company standards.
  • Food Quality: Maintain high food quality standards throughout hotel kitchen operations.
  • Sanitation: Establish and maintain cleanliness standards, including adherence to Merlin Food Safety Guidelines.
  • Menu Development: Assist in reviewing and developing menus.
  • Production & Presentation: Ensure food production and presentation meet the high standards outlined in Food Specification Manuals and recipes.
  • Sanitation & Safety: Maintain high standards of sanitation, cleanliness, and safety across all locations.
  • Equipment Maintenance: Ensure proper use of cleaning materials and equipment, reporting any failures.
  • Compliance: Ensure compliance with SOPs and general kitchen standards.
  • Team Contribution: Actively contribute to the Food and Beverage team, attend operational meetings, and effectively communicate information to the kitchen team.
  • Leadership: Lead the kitchen in the Chef's absence and ensure proper rotation and storage standards in fridges and storage units.

Financial:

  • Budget Monitoring: Assist in monitoring and maintaining food costs within budget.
  • Cost Control: Maintain control of food wastage and other cost-control measures.

People:

  • Supervision: Assist with supervising line cooks and lead the kitchen staff in the Chef's absence.
  • Training: Identify training needs and assist in delivering appropriate training.
  • Communication: Maintain consistent communication regarding schedules, payroll, and training.
  • Culture: Promote and demonstrate Merlin’s culture and core values.
  • Policy Adherence: Ensure adherence to policies and procedures and manage employee relations effectively.

Health & Safety:

  • Responsibility: Ensure personal and colleague safety, following Group Policy (HS001) and the law.
  • Safe Procedures: Follow safe working procedures and use tools and equipment only after proper training.
  • Incident Reporting: Report incidents to the line manager and cooperate with investigations.
  • Managerial Oversight: Ensure risk assessments and safe working procedures are in place and regularly reviewed. Investigate incidents and take corrective actions as needed.

 

Qualifications & Experience

Education and Experience:

  • Preferred Education: High school graduate or GED.
  • Experience: At least 3 years of practical kitchen experience, preferably in a themed environment.
  • Skills: Strong communication skills, effective organizational and problem-solving skills, and the ability to make quick decisions. Teamwork and leadership abilities are essential.

Work Environment:

  • Variety: Work in various indoor and outdoor locations with varying temperatures and conditions.
  • Conditions: Exposure to wet and/or humid conditions.

Other Requirements:

  • Flexibility: Must be willing to work flexible hours, including evenings, holidays, and weekends.
  • Certification: Current ServSafe Manager Certification and CA Alcohol Compliance Certificate within 30 days of hire.

Pay Range

Compensation between USD $67,000.00/Yr.-USD $70,000.00/Yr.
